Chicken Salad Sandwiches

*2 cups chicken cooked - cubed
* 2 cups cooked small shell macaroni (1 c. dry)
* 1 cup seedless grapes - halved
* 3/4 cup celery - chopped fine
* 1 cup mayonnaise
* 1/4 c. whipping cream
* 1 tsp. mustard
* 3 Tbs. lemon juice
* 1/2 tsp. salt
* 1/8 tsp. pepper
* 1/4 cup sliced almonds

Combine chicken, macaroni, grapes and celery. Mix together mayonnaise, whipped cream, mustard, lemon juice, salt and pepper. Mix into chicken mixture. Just before serving add almonds.

Cheeseburger Soup

¾ cup chopped onion
¾ cup shredded carrots (grated w/cheese grater)
¾ cup diced celery
½ pound ground beef
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 tablespoons butter or margarine divided
3 cups chicken broth
4 cups diced peeled potatoes (1¾ pounds)
¼ cup all purpose flour
8 ounces process American cheese, cubed (2 cups)
1½ cups milk
¾ teaspoon salt
¼ to ½ teaspoon pepper
¼ cup sour cream


In a 3-qt. Saucepan, brown beef; drain and set aside. In the same saucepan sauté onion, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 13-12 minutes or until potatoes are tender. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 minuets or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 minuets. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from the heat; blend in sour cream.
Yield: 8 servings (2¼ quarts)

One Skillet Lasagna

24 oz Ricotta Cheese
¼ cup water
½ tsp salt
1 wedge fresh parmesan cheese
4 cups shredded mozzarella cheese
2 lb. Cooked Ground beef
2 (26 oz) jars meatless spaghetti sauce. flavored with garlic, onion, peppers
1 box BARILLA NO COOK lasagna noodles
1 cloves of Garlic

Instructions: Brown Ground beef in skillet. While beef is heating, mix together: Ricotta cheese, garlic, ½ cup parmesan, water and salt in either the 2 Qrt batter bowl or stainless bowls. Drain ground beef in colander bowl set. Place ground beef back in skillet, and add 1 jar of spaghetti sauce to ground beef. Stir well. Place lasagna noodles on top of ground beef. You may have to break a few noodles to get them to fit. Spread ricotta cheese mixture over top of the noodles. Add another layer of noodles. Add second jar of spaghetti sauce over top of noodles. Top with 2-3cups of mozzarella cheese. Place lid on skillet and cook on Medium heat for20-25 minutes ON TOP of stovetop.

Chocolate Ribbon Pie

4oz. cream cheese, softened
2 Tbsp. Sugar
1 Tbsp. Milk
1 Tub (8oz)
1 Chocolate crumb crust
2 cups milk
2 pkg. (4serving) chocolate Instant pudding

Beat cream cheese, sugar & 1 Tbsp. Milk until smooth. Stir in 1/2 of cool whip. Spread on bottom of crust. Mix 2 Cups milk with pudding mixes for 2 minutes (will be thick). Pour over cream cheese layer. Refrigerate 4 hours until set. Top with cool Whip. Garnish with shaved chocolate.

Chicken Summer Soda Marinade

3 Pounds Boneless Skinless Chicken Pieces
2 cups Lemon –Lime Soda
1 cup soy sauce
1 cup vegetable oil
½ teaspoon horse radish
1-4 fresh garlic cloves smashed

Combine and blend all ingredients (except the chicken) in a large mixing bowl to make a marinade
Add the chicken into the marinade and marinate up to 24 hours in the refrigerator.
After marinating, broil or grill the chicken until done
